Thanksgiving Turkey Leftover Meals

If you cooked a whole turkey, chances are there will be plenty of leftovers. You could make the usual turkey chili, soup or pot pie. Or try something new. And boil the carcass to make bone broth.

Salads: 

  • Crunchy turkey salad with grated slaw, carrots, grated ginger and peanut dressing.
  • Radicchio salad with cold turkey, pears, pomegranate and walnuts, with vinaigrette.
  • Hearty turkey Cobb or Caesar salad with generous slices on top.

Sandwiches:

  • Turkey torta – a Mexican turkey sandwich on a thick bun with pickled red onions, avocado, shredded lettuce, crumbled cojita cheese, topped with crema and cilantro.
  • TLT: turkey, lettuce, tomato sandwiches or grilled club with cranberry, warm mustard or vidalia onion dressing.
  • Schwarma pita sandwich with yogurt, cucumber, shredded carrots, herbs and spices 
  • Turkey French dip on a baguette with caramelized onions, Swiss cheese and turkey broth dip with thyme.
  • Jerk turkey fried pie with hibiscus cranberry sauce, and lime. If you don’t have jerk seasoning, combine smoked paprika and cloves.
  • Hot turkey open faced sandwich on grilled brioche or thick-sliced French bread.

Simple on the stove:

  • Creamy turkey curry with onion, garlic, curry powder, masala, tomato paste, chicken stock and coconut milk, served over rice.
  • Turkey dark meat, sausage and shrimp gumbo with onion, green pepper, celery, garlic, okra, hot sauce and either a tomato roux or dark Cajun sauce.

Back into the oven:

  • Greek phyllo bake with feta cheese, crushed red peppers, oregano and thyme, melted butter, ground mustard and Gouda cheese between top and bottom layers of phyllo dough.
  • Turkey tamale pie baked with spices, peppers, layers of polenta and black beans and cheese bubbling cheese.
